Evaluation of Compliance with Food Safety Standards in Restaurants and Eateries in Awka, Anambra State

Food establishments such as restaurants and eateries represent significant points of potential foodborne disease transmission in urban Nigerian communities. This study evaluated compliance with food safety standards in thirty-five registered food establishments in Awka, Anambra State, South East Nigeria. Unannounced inspections were conducted by trained environmental health students under supervision, using a checklist adapted from the Nigeria Food Safety Regulations. Parameters assessed included personal hygiene of food handlers, food storage temperatures, sanitation of equipment and surfaces, pest control measures, waste management practices, and availability of food handler medical certifications. Results showed that overall compliance scores ranged from thirty-two to seventy-eight percent across assessed establishments, with a mean compliance score of fifty-four percent. Critical non-conformances frequently identified included improper food temperature maintenance (sixty-eight percent of establishments), absence of pest control records (seventy-three percent), and unsatisfactory toilet facilities for staff (sixty-two percent). Restaurants in high-traffic commercial zones demonstrated marginally better compliance than smaller peripheral eateries. Only twenty-nine percent of food handlers possessed valid medical certificates. The study concludes that food safety compliance in Awka food establishments requires significant improvement. Recommendations include regular regulatory inspections, mandatory food safety training for operators, and improved enforcement mechanisms by the Anambra State Environmental Health Officers.
