Assessment of Meat Hygiene Practices in Slaughterhouses in Kano Metropolis, Kano State

This study assessed meat hygiene practices in selected slaughterhouses in Kano Metropolis, Kano State, located in Nigeria's North West geopolitical zone. Poor meat hygiene at the abattoir level remains a significant public health concern because contaminated meat products can serve as vehicles for zoonotic pathogens and foodborne illnesses. A cross-sectional observational design was employed, involving structured inspection of three government-approved slaughterhouses. Data were collected through direct observation using a standardized checklist adapted from the West African Health Organization guidelines, supplemented by interviews with 60 abattoir workers. Parameters assessed included ante-mortem and post-mortem inspection procedures, carcass handling, water supply adequacy, waste disposal, and personal protective equipment usage. Results indicated that fewer than 40% of workers consistently wore protective gear, and improper evisceration techniques were observed in over half of all carcasses inspected. Waste disposal systems were found to be inadequate in two of the three facilities. These deficiencies create conditions favorable for microbial contamination and pest infestation. The study concludes that systematic enforcement of veterinary public health regulations and continuous capacity-building programs for abattoir workers are urgently required. Recommendations include investment in modern slaughter infrastructure, mandatory training, and regular veterinary inspections to protect consumers from meat-borne hazards.
