This study examines productivity levels within cassava processing operations among FADAMA III beneficiary farmers in Enugu State, located in Nigeria's South East geopolitical zone. The cassava processing sub-sector remains a critical component of Nigeria's agricultural value chain, yet smallholder processors frequently contend with low throughput, equipment downtime, and inefficient workflow designs. Drawing on recent literature published between 2020 and 2025, this research applies time-and-motion study techniques alongside basic productivity indices to quantify output per labour hour and per unit of energy consumed. Primary data were collected from twenty processing units across three local government areas using structured observation checklists and direct interviews with plant operators. Findings reveal that manual peeling and grating stages constitute the principal bottlenecks, accounting for approximately sixty-two percent of total processing time. The study further identifies irregular raw material supply and inadequate maintenance culture as compounding factors. Recommendations include the adoption of semi-mechanised peeling equipment, the introduction of preventive maintenance schedules, and improved supply chain coordination with local farmers. This research contributes practical, context-specific insights that can guide extension officers, cooperative societies, and state agricultural agencies in redesigning processing workflows to achieve measurable gains in productivity and market competitiveness.
