Assessment of Cold Chain Management in Meat Distribution Networks in Ibadan, Oyo State

Effective cold chain management is essential to maintain meat safety from slaughter through to the point of retail sale, yet this chain is frequently broken in Nigerian distribution systems. This study assessed cold chain management practices in meat distribution networks in Ibadan, Oyo State, South West Nigeria. A descriptive cross-sectional study was conducted with 60 meat distributors, retailers, and transport operators recruited from four major markets. Structured questionnaires and direct temperature measurements at meat storage and transportation points were employed. Microbiological sampling of 50 beef portions was conducted to correlate temperature findings with product safety. Results showed that 83.3% of distributors used non-refrigerated vehicles, and 70% stored meat at ambient temperatures exceeding 15 degrees Celsius. The mean temperature of retail meat display was 22.4 degrees Celsius, substantially above the recommended maximum of 7 degrees Celsius. Microbiological analysis found total plate counts exceeding limits in 62% of sampled beef, with a significant positive correlation between time-temperature abuse and microbial load. Retailers cited cost and unavailability of refrigerated vehicles as primary barriers. The study concludes that cold chain failures in Ibadan's meat distribution system significantly compromise meat safety. Investment in affordable refrigeration infrastructure, regulatory standards for meat transport temperatures, and monitoring programs are recommended.
